Review: Winesap SV by Liberty Ciderworks

Sweetness: Dry

ABV: 8.30%

Cider Maker’s Description

Winesap apples are one of America's oldest cultivars, dating as far back as the late 1700s. Settlers prized the "Wine-sap" for its versatility, its long storage life, and (of course) for making cider. This single-varietal cider presents Winesaps as nature intended: dry and refreshing, with hints of buttery cocoa, lychee, and honey. Enjoy on its own, or paired with pork, cheese, spicy thai, or charcuterie.

Appearance:

  • light haze, golden color

Carbonation:

  • swirl produces full 1/8" coverage of small bubbles that disappear quickly

Aromas:

  • apple skins, earthy, forest soil

Taste:

  • true to the apple, grass, lightest hint of funk

Mouthfeel:

  • tannic, astringent, moderate acidity

Matthew favors dry hard ciders with body and leans towards traditional English styles, and he’s also developed a serious appreciation for hopped ciders and creative flavor infused ciders. Though he prefers sweets in solid forms, he does enjoy semi-sweet to sweet ciders responsibly when the mood strikes. Learn more about our Chief Cider Curator here.
