Cider Maker’s Description

In homage to America’s hard cider history and the larger-than-life Captain Stormalong, our flagship cider is named “Legendary Dry”. This cider showcases a unique blend of heirloom cider apples, including tannic, bittersweet varietals. Fermented with traditional techniques, these apples produce a crisp, complex cider with distinctive fruit character, and a bright acidity mellowed by age and malolactic fermentation.

Cultivars of apples used in this blend include: (Bittersweet) Ashton Bitter, Chisel Jersey, Dabinett, Ellis Bitter, Yarlington Mill, (Heirloom) Ashmead’s Kernel, Esopus Spitzenburg, Northern Spy, Wickson, (Common) Idared, Shizuka, Pinova, Macoun, Golden Delicious. This cider is blended selectively from multiple batches, some that have gone through partial malolactic fermentation.

  • clear, rich golden color, bright

Carbonation:

  • moderate carbonation

Aromas:

  • leather, red apple

Taste:

  • red apple skins, woody, leather

Mouthfeel:

  • full bodied, pleasant acidity, light tannins

Finish:

  • quick clean finish
