Cider Maker’s Description

Our single-varietal Newton Pippin dry cider is fermented partially wild, giving it not only incredible flavor but ties it to our specific geography here in the Northwest. The cider is dry and aromatic with a crisp apple profile, and only a whisper of apple sweetness on the lingering finish makes this cider incredibly drinkable.

Appearance:

  • crystal clear, yellow color

Carbonation:

  • moderate carbonation, riding strings of tiny bubbles remained well after pouring, full coverage of medium bubbles on pour

Aromas:

  • oaky notes, hints of green apple,

Taste:

  • herbal, grassy, crisp apple

Mouthfeel:

  • good body, just a little sharp bite to it, light tannins, bubbly

Finish:

  • quick and clean

Tasting Notes / General Impression

easy drinking with a great traditional cider flavor, a great nod to the wonderful Newtown Pippin

Matthew favors dry hard ciders with body and leans towards traditional English styles, and he’s also developed a serious appreciation for hopped ciders and creative flavor infused ciders. Though he prefers sweets in solid forms, he does enjoy semi-sweet to sweet ciders responsibly when the mood strikes. Learn more about our Chief Cider Curator here.
